A century old house

CookSome is catering company that was founded in 1899 by Mr. Concave Eko, in Lagos, Nigeria. Mr. Concave's first class of customers mainly consisted of white colonial masters who were stationed in Lagos as at then for administrative duties. Having started as a cook for the colonialists in 1936 after his education in England, it was not very hard for this young man to immediately transform his services to a standard food and catering company that flawlessly gained the trust of both the colonialists and natives Nigerians alike, from the upper class to the middle class and below in the mid 1900s. 1953 saw Mr. Concave taking the CookSome brand to new places like Calabar, Abujah, River(Porthacourt). When the founder departed in 1978, the tradition of excellence and good work was carried on by enthusiasts who shared his vision and spearheaded by his son Danja Concave the current president.

And today, our excellent catering services can be accessed in 35 different countries of the world and growing, boasting of great cheffs, events, recipes, quisines, style and presentation. We only use seasonal ingredients and we are a Green Earth supporting company

A stroll on Lawanson street and a cruel culinary experiment


One day i was almost bored to death at home, frustrated and angered by series of disappointment the previous day due to some business deal that didn't go through. That morning kids were playing, screaming and yelling like little demons all over the compound, disturbing the peace out of everbody because it was a holiday. A neighbor's generator was at the backyard groaning like a pregnant woman experiencing child labour, this was the most annoying part because it won't stop and i couldn't think in the midst of all that noise pounding my ear drum from the backyard, i almost went crazy. That's when i remember my culinary therapeutic routine helps whenever i am experiencing in-life-distress disorder. So i turn and head back home because at this point i couldn't even remember where i was going or while i was walking in the first place.

For those of you who would really love to stop by for a nice coffee, warm soup, heavy dinner or gossip, i gladly give directives to my where i stay below and its a humble place not a castle.

And i like to make soup, stew, fries and all. I just love to work in the kitchen when i am not coding or watching my favourite TV shows. I have a list of the recipe i used last in my culrinary experiment. Quick hummus recipe; This recipe makes quick, tasty hummus, with no messing. It has been adapted from a number of different recipes that I have read over the years. Hummus is a delicious thick paste used heavily in Greek and Middle Eastern dishes. It is very tasty with salad, grilled meats and pitta breads.

Ingredients
  1. 1 can (400g) of chick peas (garbanzobeans)
  2. 175g of tahini 6 sundried tomatoes Half a red pepper
  3. A pinch of cayenne pepper
  4. 1 clove of garlic
  5. A dash of olive oil

Instructions
  • Remove the skin from the garlic, and chop coarsely
  • Remove all the seeds and stalk from the pepper, and chop coarsely.
  • Add all the ingredients into a food processor Process all the ingredients into a paste
  • If you want a coarse "chunky" hummus, process it for a short time, but if you want a smooth hummus, process it for a longer time.
  • For a different flavour, you can try blending in a small measure of lemon and coriander, chili pepper, lime and chipotle, harissa and mint, or spinach and feta cheese. Experiment and see what works for you.

      Storage

      Refrigerate the finished hummus in a sealed container. You should be able to use it for about a week after you've made it. If it starts to become fizzy, you should definitely discard it. Hummus is suitable for freezing; you should thaw it and use it within a couple of months.
